the "Trulli" and the "Masserie", which is characterized by a mild
climate and by a sub-alkaline soil, mostly formed by clay and sand.
The firm, availing itself of the secular experience of the Caroli's
family, in addition to the olives of its Masserie "Monte Trazzonara"
and "Pizzo Mammarelle", selects even the olives of the nearby areas.

Besides the company
boasts a limited production of the "SURFACING" olive oil (about a 10%
of the total production), which is well recommended in the diet of the
first childhood and for very prestigious dishes. |

The business produces various types of extra-virgin olive oil which
are different thanks to a careful selection of the several olive
cultivars and to the choice of the different processing methods.
Always careful to the product's quality, it suggests, next to its
varieties of olive oils, a fine selection of wines, pasta, preserves,
